Baked Salmon, Chickpeas, Zucchini & Peppers
Seasonings:
1 tsp ground Coriander
1 ½ tsp ground Cumin
1 ½ tsp ground paprika
1 tsp salt
½ tsp ground pepper
Ingredients:
1 medium red onion thickly sliced
One can 15 ½ oz chickpeas or soaked and cooked from dry
1 medium Sweet red pepper Chopped
2 medium Zucchini cut into 1” pieces
1 lb salmon, skin on preferable cut into 4 pieces
1 Lime cut into 4 wedges
Optional topping:
4 tbls plain Greek yogurt (mix in ½ to 1 tsp favorite hot sauce to give it some spice)
Mint leaves
Instructions:
Preheat oven to 450F place empty cooking sheet pan in oven during preheat
Mix spices well in small bowl and set aside
In a bowl, mix vegetable with olive oil and about half of the spice mix, toss to coat.
After oven has arrived at 450F pull tray out of oven and carefully spread vegetables on the pan and put back in the oven cook for 15-18 min.
While this is cooking sprinkle the salmon pieces with the remaining spices
Remove pan from oven and toss vegetables with spatula and make space on the pan for the salmon.
Add the salmon skin down and cook 8-10 minutes
Plate into 4 servings, serve with the lime wedge and add optional Greek yogurt/hot sauce and mint.
