Baked Greek White Fish

Baked Greek White Fish

Serves 4

1lb White Fish (I use lingcod or rockfish), patted dry of excess moisture and lightly salted and peppered

1 white/sweet onion sliced thin

2 cloves garlic chopped

2TBS fresh Dill chopped or 1 Tsp dried dill

1/2 a lemon sliced thin

1-2 TBS Olive oil

1 cup cherry or grape tomatoes (cut in half)

1/2 - 3/4 cup Greek or mixed olives of choice, pitted and halved

1 tsp dried Oregano

2-4 oz Crumbled Feta

pat dry fish and lightly salt and pepper

Pre-Heat Oven to 425F

Spread onion, tomatoes, olives and lemons in baking dish. Place fish on top of vegetables top with oregano, garlic, dill and drizzle olive oil. Cover tightly with foil and place in oven.

Bake for 12-15 minutes or until fish flakes Dish up servings and top with Feta.

Serve with rice or quinoa.

Nice with a cucumber and tomato salad
